Pin for the Wednesday: Dill Potato Salad

This weekend, Jeremy planned a little get-together for my birthday with some of my closest friends. And although, he wanted me to take it easy for the party prep, I just couldn’t handle watching him spend more money then he needed to on food trays and deli salads so I took care of the food prep, which isn’t hard just time consuming.

With everyone bringing meat to grill, I wanted to have some type of potato salad and my all-time favorite is Dill Potato Salad. But where we get it (from a local grocer) it is pricey. So I immediately checked Pinterest to see if I could find a recipe that looked similar to what I get at the store. I was hoping to find one that looked similar to what  I love but easy to make. Because you know I am all about the easy!

I found this pin for Ina Garten’s Dill Potato Salad. It was super easy to make which I like. Here is the recipe from the site and in bold is what I changed slightly. I also used the whole 5 lb recipe which I increased the total recipe:

Ingredients:

  • 3 pounds small white potatoes  (I used 5 lbs red potatoes)
  • 1 cup mayo (I used 1 and 2/3 cup mayo)
  • 1/4 cup buttermilk (I eye-balled 2/3 of a 1/4 cup plus the 1/4 cup)
  • 2 tablespoons Dijon mustard (I used about 3 TBS)
  • 2 tablespoons whole-grain mustard (I kept this the same because I have never used it before)
  • 1/2 cup chopped fresh dill ( I used a little less then 1/2 c. freeze dried dill for the whole recipe. I added to taste)
  • salt and  pepper
  • 1/2 cup chopped celery (I approximated a little more then 1/2)
  • 1/2 cup chopped red onion (I approximated a little more then 1/2)

Jeremy thought is was awesome and asked why I don’t usually make my potato salads homemade.

What was awesome is that for the price of 1lb of Dill Potato Salad from the store, I made 5 pounds for almost the same cost, maybe a dollar more at the most!

Woot! Another Pinterest win! And this recipe is definitely a keeper.
