Sometimes All You Need is Buttercream
Do you remember my love/hate relationship with buttercream? Let’s face it, I LOVE fondant. I love making cakes with fondant. Buttercream scares me!! I just am not that confident in working with it.
But let’s also face the fact that some people want to order a buttercream cake…oh the stress
So this week, I was able to make a Bert and Ernie cake for my friend Andrea’s son and also make cupcakes for a local school fundraiser – both buttercream. Eek! The Bert and Ernie cake was chocolate almond cake with Oreo buttercream filling – Yum!
Because I Couldn’t Just Buy Cookies…
I am completely OUT. OF. CONTROL!!!! Last week I needed to sign up to bring something for Evan’s Preschool Christmas Party. It was at the beginnings of the Cinderella Cake, and I was feeling all crafty and creative, so I decided to volunteer to bring cookies. I have wanted to try my hand at replicating the gorgeous cookies from our local bakery.
I knew I couldn’t replicate them on my first shot, but I was hoping to come close. And since I have said it more than a couple of times, you are aware that I am *slightly* a perfectionist.
I think this perfectionism toward all things baking is going to kill me, and most likely, kill me pretty soon. So this week, I have been scouring the internetz for sugar cookie recipes and icing recipes. After trying several recipes, yes you heard me right. I tried several recipes this week, before landing on one that was close to my dream.
Needless to say, the boys have loved my trial and errors.
By about 4:00 yesterday, I was VERY, VERY tempted just to go buy some @%*$ cookies. But I persevered and ended up with these:
Not bad, right? And according to the 3 men in the house, they tasted pretty good too
!
But, because I am always looking for the “right” recipe, if you have a wonderful go-to sugar cookie recipe and / or icing recipe, HELP ME OUT! Why doncha?
Carter’s Fire Truck Cake

! But the best part was that Carter LOVED it and isn’t that all that matters! And the highlight for the kids? The working lights (done by my dad)!
Miss Jolie’s Birthday Cake

My friend Deanna’s little girl turned 1 this week. She asked if I could make a cake for her party! Of course! It is the only time I get to make little girl cakes with all the frillies! She told me pink, lavender and light blue and other than that I had free reign. I decided to make Jolie’s “smash” cake a part of the actual cake. So the top tier is her cake made with butter cream (so that it is easier to eat for her) that she gets to eat all by herself and the other 2 tiers are for her guests (all fondant).




The Princess and the Football

I got a last minute cake job this week. It was for Evan’s “Aunt” Penny. Penny’s son wanted a football cake and her granddaughter is all girl and wanted a princess cake. So I got to try my hand at some new ideas and methods. I had left over fondant from Evan’s cake but not enough for the princess
but I made do with buttercream. It was a CRAZY busy week but thankfully I had all the materials on hand, which is a miracle in itself and only had to run out to grab a few ingredients for the cakes.
Flower Making: Week 4 Cake Decorating Class
Thankfully I didn’t have to have a cake for this week’s class. We just spent time practicing different types of flowers. Except for the rose, the rest of the flowers were new to me. I’m not too disappointed with my first tries! Our final project is a flower basket cake (in 2 weeks) where we will use any combination of the flowers we learned tonight!
Here’s what I did (and notice, I was too lazy to mix more than 2 colors and the green was leftovers from last week
) From left to right: roses, daisies, sweet peas, rose buds, zinnias, bachelor buttons and wild roses. I left early so I didn’t get to practice a carnation.
Wordful Wednesday – Labor of Love Pt.2
Don’t fret, if you notice I’m a little absent this week from the land of technology (I truly appreciate those of you that email me to make sure I’m okay since you don’t see me on Twitter or Facebook). It is Evan’s birthday this weekend and I have already started the preparations for his cake – besides having a cake class Wednesday night.
The reason of my early, frantic start at the beginning of the week?: previous said class on Wednesday night, a (long over due) doctor’s appointment Thursday night, another kid’s birthday party Friday night! Besides, you know, my other job of making sure 2 little sets of hands don’t get into the cakes during the day!
Uckk, I can only stand smelling cake and icing for so long! Here are my stats so far:
- 4 cakes baked (2 more to go)
- iced class cake (waiting on the other 2 cakes to stack on the chocolate ones before icing and fondant)
- 4 batches of fondant
- buttercream icing mixed

It’s A Dog-Eat-Dog World

This week I got to make a cake for Brooklynn’s 3rd birthday party. She requested a Dachshund cake. Planning the cake was a little challenging for me because in my mind the cake needed to be as “girly” as possible but still incorporate a brown dog. So Beth was gracious enough to make a quick topper for me before she went home to Florida and we decided to do a Brown-Pink-Cream-Silver theme. Here is the end result:
We Built a Cake, We Built It (Word World Cake)

As you recall from last week’s post on the stressful opportunity to make Miss Sophie’s Birthday cake, I did a practice run with fondant, since I have never been successful with it yet. But I can officially say, that I don’t mind working with fondant. It is still a challenge for me, but now I have two cakes under my belt. But enough talking, I know you all want to see the finished product!
But, another small piece of info before I reveal the final product, my wonderful sister-in-law, Beth, was brought on board to work on the characters. She is an amazing and talented artist so I asked her if she wanted to do a “small” project for me. She has never done fondant before, but as you can see she worked magic! We had a ton of fun working together and I wish she lived closer so that we can do this again (she was staying here while her husband Nate was deployed in Iraq, but he will be home in 2 weeks so she will be leaving us and heading home
)

And after working on this cake for some time and the fact that it was way past our bedtimes, Beth and I thought it would be fun to make Pig a little bit more discreet ( but don’t fret, it wasn’t permanent)…
Bring In the Clowns!
It is so frustrating for me not to be good at something. Especially something that I am totally interested in. But once again this week I was not the head of the class, nor was I second…remember from last week, I mentioned they’re are only three of us.
My roses are getting a little better. Not much, but I am content, until next week when I have to have a rose on my final project.
My favorite thing of this week’s class was learning how to make the clowns. I’m not too impressed with plastic heads on cakes, but these turned out better than I thought they would. And I know the boys are going to love them. I wanted to get the scarecrow heads but our local cake supply store was sold out. So I was stuck with the clowns. I decided before hand to have the clowns match the paper cups of the cupcakes and I think the bright colors really look festive.
But to show that I am okay with not being the best in my class here is a pic of what I am STILL struggling with. The reason I took the class was to learn the “shell”. Because for Carter’s birthday cake, it was supposed to have cow heads – using the “shell” technique. I couldn’t figure it out then, and I STILL can’t get it right. The instructor tried to show me 3 times, but to no avail! The second cupcake was my attempt to make a pumpkin using the said “shell” technique. And as you can clearly see…it doesn’t resemble a pumpkin whatsoever.
And finally, my wonderful husband, who after I showed him my cupcakes and explained that I suck could use some more practice, asked, “But you are enjoying yourself, right?”
“What do you think? I am not the best in my class!” Competitive? Nah! Enjoying myself? Slightly!
Somewhere Over the Rainbow
So here is my assignment for week 2 of my Wilton Decorating Class. I could either do a rainbow or go out and buy a character cake – which I didn’t really want to do, at this point since I don’t know what the kiddos will be into for their birthdays. So I didn’t want to waste the money on a pan that I wouldn’t use. So I did the rainbow. Not my best work I don’t think (If you haven’t seen the other posts on my cakes you can click HERE and HERE) but it will do. But I did enjoy doing a cake that the main color wasn’t green!
I tried a new cake recipe, which I know better since I knew I wouldn’t be doing it over again, if it didn’t turn out. I had to ice the cake twice. The first time – the crumbs were too bad so I took off all the icing and redid it. It still crumbed a little bit, but not too noticeable. I wanted to try to ice a cake without doing a crumb coat. Yeah, learned that lesson!
And I wanted to try my hand at piping and as you can see, there is no piping. Yep, had to take off the first rainbow because it looked HORRIBLE. Have I mentioned before that I don’t have a steady hand since having children? Is that normal? I don’t know! I constantly have a little shake to my hands as if I have had too much caffeine, but it’s even there when I don’t have caffeine. SORRY major digression – Anyway I had to re-ice the area and do just the plain minimum – which was practicing the star pattern. So I did the star pattern. There are a couple of places that the stars weren’t tight enough and the blue showed through. But as I said before, I am not going to be picky at this point in the game.

What? I’m NOT Perfect?
I decided to take the Wilton Cake Decorating Classes because of my obsession with my sons birthday cakes (click HERE, HERE and HERE if you would like to see what I have done so far). I thought it would be fun! It would be if a.) I had more time to spend practicing and b.) If I wasn’t such a perfectionist.
So for my first assignment, everything that could go wrong did, but some who know me would be proud, I just went with it and showed up to class with a “not-so-great” iced cake. More details about that in an upcoming post, along with pics from my first assignment.
But we did our first roses last night. I thought to myself, I can do this. I have always been great with small motor skills with my hands and hand-eye coordination. Well, needless to say, I was put in my place. Out of the 3 of us, mine were not the best, nor were they the second best, so for you smart ones out there, that left me, where? Yep, I admit it, at the bottom of my class {sniff, sniff, are you feeling sorry for me yet?}
So here is proof, because you know I always bring my camera for blogging opportunities. Yes, the other ladies were probably wondering why I was taking pics of this!! Only if they knew

My first, second and third attempt at a Wilton Rose. So I have to come to grips with not being perfect all the time. And let’s face it, when do I have time to practice with TWO toddlers running around? I guess I will be staying up late nights practicing. {Maybe}
But I could use some encouragement
. You can at least tell me they look great, even if you don’t mean it! And by the way, the petals on the pink one-suppose to be smooth-oops!
Fondant FAIL

Well, one of my really great Friends, Jenny (yeah if you follow my blog, you hear a lot about her), was having a birthday party and I told her hubby that I would make the cake. I had this beautiful Farkle (Facebook) cake in mind – because Jenny is slightly obsessed- and I really wanted to try my hand at Fondant.
On Friday, I put both kids down for their naps and began to get the fondant ready. I spent about an hour getting the first batch of fondant to the perfect shade of green. The cake was a double layered chocolate 12 inch square cake. I needed a lot of fondant (for my first time trying it). While I was kneading away and mixing the green into the fondant, Evan was still awake, jumping in his bed and making a ruckus. But since he wasn’t really complaining about being in bed, I was allowing him, to an extent, to play while I was working. I got the fondant ready and rolled out. Evan starting yelling about his bed being “dirty”. I didn’t think anything of it and continued to work. I was rolling the fondant up to get it ready to put on the cake, and as soon as I was putting it on the cake, Evan really started freaking out. Which for a moment, I lost my train of thought and placed the fondant on the cake, and of course it was NOT centered and I didn’t have enough fondant on one side of the cake. By now Evan is screaming fanatically at me that his bed is “dirty” and out of panic I picked up the fondant and the fondant took off the top of the cake.
Here I was with a handful of fondant in my hands and a destroyed cake and a SCREAMING KID. I literally rolled up the fondant in a ball out of shear anger and threw it on the table next to the cake. Ran into Evan’s room and low and behold – wait for it – any ideas what I saw – yep – he had thrown up all over his bed.
So now I have a HUGE mess in my dining room, and a HUGE mess in Evan’s room and all of the noise woke up Carter. WOW!! FUN STUFF! In case you are wondering, no I didn’t take any pictures of the mess. Surprisingly, I was so frazzled, the idea didn’t come to mind until AFTER everything settled down and the mess was cleaned up! Sorry!
So I panicked, told Evan to stand really still, ran into the dining room, placed the cake in the refrigerator out of harms way and ran back into his room. Got him stripped down, threw him in the tub, cleared the bedding off his bed and threw it in the washing machine. Cleaned him up and let him play in the tub (upon his request) and while he was playing in the tub, tried to clean up the powdered sugar mess on my dining room table and cried!!
Then after he was finished with his bath, I got Carter up, who fortunately was having a great time playing in his crib.
The perfectionistic side of me was going to try the fondant again. After Jeremy got home, I took another trip to the cake supply store and on the way back, the tired mom side of me said, “screw it” and decided to make the cake out of the ol’ stand by – the star tip.
And that is what I did. The cake didn’t turn out as I had planned, but it was a good lesson for me! Even Saturday morning (the cake was iced and finished Friday night) I was tempted to scrape off ALL the icing and attempt the fondant again. But I didn’t, I allowed myself to relax with my family and enjoy the holiday weekend. And NO, Jenny, I didn’t want to let you know any of this because I truly enjoyed doing this for you and will make you an even better Mountain Dew one next year (out of fondant)!!
I LOVE making cakes!! It really has started to become a real creative outlet for me, but maybe I should not try new things on actual cakes that are being made for someone.

A Labor of Love
So when Evan turned one, I decided at that point that, Lord willing, I would always make my kid’s birthday cakes! His was simple. His obsession at the time was -surprise surprise – basketballs. It was a pretty simple cake.

But by his second birthday he was into tractors and that cake was not as easy. Since I really enjoy a challenge, I find the hardest cake pattern I can find and try:

With Carter, the inspiration wasn’t as easy. His 2 obsessions lately have been books (which makes my lil’ teacher’s heart skip a beat) and our cat Maya. Neither one of those is a great theme for a birthday party. Can you see it – cats every where? Don’t think so! But it hit me a few weeks ago that his VERY FAVORITE book right now is:
Along with that book and “Moo, Baa, La La La” he has a growing obsession with cows. I will moo and he will moo. Sometimes I will hear him mooing in another room. So the idea took shape. A farm themed birthday party.
I always seem to get in over my head, but this time I was prepared, or so I thought. I called around a couple of months ago to find a cake decorating class, but because of the summer time there were none offered until August. So I went with the old stand by – Google. I found a few sites that actually had step by step video on some basic cake decorating techniques which gave me enough confidence to try this:
And since Carter is obsessed with cows, he got his very own:

See the problem, I felt, poor Carter gets all the hand-me-downs and I remember someone during Evan’s 2nd birthday making a comment like “How are you going to out do this cake, when it is time for Carter’s birthday”. So at this rate, can you imagine what their cakes are going to look like when they are 18! Evan is already talking about what kind of cake he wants for his birthday – 6 months from now!!
So after 8 hours of cake decorating fun and developing carpal tunnel, I finished it! The boys loved it and that is all that matters!
